The wine really opened up at this stage, keeping its' delicate structure and opening up to a true Meunier wonder. In my opinion it is one of the most interesting grape varieties in Champagne, Eocene being no exception. The wine became very complex, with this delicate and elegant structure, saline notes mixed with the richness of Meunier and a gorgeous acidity keeping everything fresh. Light fading at the edges and slight mature notes in the bouquet lead me to believe the 2018 will likely be more of a medium-term drinker, its notable presence notwithstanding. Tobacco, dried herbs, mint, leather, cinnamon and dried autumn leaves all develop with a bit of aeration. Wines are fermented in barrel with native yeast and no additives, except sometimes sulfur, which is only used prescriptively. If the wine is thriving, he adds zero sulfur. Additionally, there are no pumps, and everything is done by gravity. Furthering his quest for wines without artifice, Thibault embraces a risky and rarely employed method for capturing the bubbles in his wines. Other than the cuvée Ypresien, which uses MCR (rectified concentrated grape must) to initiate the secondary fermentation, Thibault chose to add frozen grape juice to all other cuvées to launch the second fermentation. As of the 2020 vintage, he employs the “Agrapart Method” opting to use fresh, unfrozen juice from the following year for the \u003cem\u003eprise de mousse\u003c\/em\u003e. This approach is not only \u003cem\u003ethe\u003c\/em\u003e way to achieve a Champagne of 100% pure juice, but it also adds no alcohol to the wine, unlike traditional sugar mixture additions that add approximately 1.5% alcohol to the finished wine. This allows Thibault to seek phenolic ripeness and balance in the vineyard without the fear of elevated alcohols in the finished Champagnes. While there is much discussion of this method in the region, it is quite rare to see it applied. When Saint-Joseph gained AOC status in 1956, the area under vine was very small, centered around the villages of Mauves, Tournon, and Saint-Jean-de-Muzols. The steep, east- and southeast-facing slopes here create what is nearly a mirror image to the fabled hill of Hermitage directly across the Rhône. In fact, the two appellations sit on the same granite bedrock formation, bisected by the river's flowing waters to create the topography we see today.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eIn 1971, the Saint-Joseph appellation was significantly expanded, bridging the gap between Cornas to the south and Côte-Rôtie in the north. The vast increase in acreage included lesser sites on flatter land, and many over-cropped, forgettable wines soon followed. The Gonon brothers break this paradigm completely, as they both farm and vinify in the old-school style. They work their ten hectares of land entirely by hand, the steep grade and narrow spacing making mechanization impossible in most parcels. Their vines are trained in the traditional \u003c\/span\u003e\u003cem\u003eéchalas\u003c\/em\u003e\u003cspan\u003e method, with a single stake per vine, and they do not trim the shoots. While the Gonons have been farming organically since 2004—without any chemical fertilizers, herbicides, or pesticides, and using all-natural composts—they obtained certification in 2013. Their low-yielding vineyards span the three original communes of Saint-Joseph, sitting on poor, well-draining granite and gneiss soils, including old-vine parcels purchased from the famous Raymond Trollat, now retired, in 2006. Vineyards are replanted with \u003c\/span\u003e\u003cem\u003esélection massale\u003c\/em\u003e\u003cspan\u003e cuttings from their strongest vines to perpetuate healthy rootstock and ensure genetic diversity. Once in the cellar, they ferment the wines traditionally in open, oak vats, with regular punch-downs by foot. The reds see a high proportion of stem inclusion, traditional in the region, and show classic aromatics of black olive, violets, and game with a great capacity for ageing.
