The bubbles were extremely delicate and fine, which is always a pleasure. Following the recommandation of a friend, I decided to slowly decant it for another half hour. The wine really opened up at this stage, keeping its' delicate structure and opening up to a true Meunier wonder. In my opinion it is one of the most interesting grape varieties in Champagne, Eocene being no exception. The wine became very complex, with this delicate and elegant structure, saline notes mixed with the richness of Meunier and a gorgeous acidity keeping everything fresh.
