He was not only the co-founder of the Independent Winemakers of the Saône-et-Loire; he also was one of the principal initiators of the new, higher quality Viré-Clessé appellation in the 1990's. André has since passed the torch to his daughter Jacqueline and her husband Eric Palthey. No chemical weed-killers are used between the vines, and certain strains of hay are planted between the rows (which aerates the soil and brings it valuable nitrogen). Insecticides: taboo! In fact, the family actually encourages certain predators that they feel create a natural balance in the vineyard. Yields are kept low. Grapes are picked by hand, and are delicately pressed with their stems in a balloon press. Parcels are vinified separately using only their indigenous yeasts. The wines are lightly filtered before bottling so that they are clear and brilliant, and minimal sulfur is added. Underneath the winery is a very humid, dark cellar, whose moist walls are stained black with mold. Wines are fermented in barrel with native yeast and no additives, except sometimes sulfur, which is only used prescriptively. If the wine is thriving, he adds zero sulfur. Additionally, there are no pumps, and everything is done by gravity. Furthering his quest for wines without artifice, Thibault embraces a risky and rarely employed method for capturing the bubbles in his wines. Other than the cuvée Ypresien, which uses MCR (rectified concentrated grape must) to initiate the secondary fermentation, Thibault chose to add frozen grape juice to all other cuvées to launch the second fermentation. As of the 2020 vintage, he employs the “Agrapart Method” opting to use fresh, unfrozen juice from the following year for the prise de mousse. This approach is not only the way to achieve a Champagne of 100% pure juice, but it also adds no alcohol to the wine, unlike traditional sugar mixture additions that add approximately 1.5% alcohol to the finished wine. This allows Thibault to seek phenolic ripeness and balance in the vineyard without the fear of elevated alcohols in the finished Champagnes. While there is much discussion of this method in the region, it is quite rare to see it applied. Adding frozen juice, though not commonplace, is seen more frequently and will likely be more embraced as growers continue to contend with the challenges of a warming climate.

After bottling, all Legrand Latour Champagnes are aged on the cork for 30-40 months in the family caves, which maintain perfect humidity and temperature. Harvest is done by hand and the grapes are brought to the cellars for immediate pressing where the musts are protected by inert gas in stainless steel vats to avoid the immediate use of sulfites. Grape musts are allowed to settle for 12-24 hours without any additives, after which time the juice is transferred into barrel. Tellier prefers young but neutral barrels fine grained oak from the forests of the Vosges, Nièvre and Allier regions. Fermentation takes place in barrel using indigenous yeasts and the wines are aged in barrel without sulfites for the ensuing 8 months before blending and bottling, where the wines are lowered into the deep limestone cellars for a minimum 40 months aging on their lees. Once in the cellar, they ferment the wines traditionally in open, oak vats, with regular punch-downs by foot. The reds see a high proportion of stem inclusion, traditional in the region, and show classic aromatics of black olive, violets, and game with a great capacity for ageing. The Gonon brothers' wines are gutsy and wild, while still showing the freshness and delicacy typical of the appellation.

Includes one bottle each of:

2018 Saint Joseph Blanc “Les Olivers”

2020 Les Iles Feray Rouge

2021 Les Iles Feray Rouge

2022 Les Iles Feray Rouge

2021 Saint Joseph Rouge

2022 Saint Joseph Rouge

One of the most acclaimed Sonoma wineries, routinely scoring between 95-100 points!

We have a large personal collection and are building mystery packs in 3, 6 and 12-pack increments.

Each set will have some combination of top-scoring Chardonnay, Pinot, Syrah or Cabernet Sauvignon. The Goldtröpfchen parcel includes terraces established in the early 20th century and the Schuberstlay, one of the smallest single-vineyards in all of the Mosel with only about one hectare under vine, flaunts ungrafted vines around 100 years old. This is serious terroir. So serious, in fact, that as of vintage 2018 Julian has handed the Schubertslay vineyard over to one of his best friends, Klaus Peter Keller. This will be Keller’s first Mosel wine, which is a huge deal. In return, with vintage 2018, Julian will make a small amount of wine from Keller’s Frauenberg vineyard in the Rheinhessen.

“From vineyards that he exchanged with Keller.
