Amarone is wine made from dried grapes — a concentration technique so extreme it produces something almost outside the category of normal red wine.
The appassimento method dries the Corvina, Rondinella, and Molinara harvest on drying racks for months before pressing and fermentation — concentrating sugars, flavors, and structure into wines of enormous density and longevity. The result is a wine that tastes like nothing else: dried cherry, chocolate, bitter herb, tobacco, and a power that lingers for hours after the glass is empty.
