The most famous appellation in the Southern Rhône — named for the 14th-century Avignon papacy that relocated here and brought the vineyard to prominence — produces wines from the large round stones (galets roulés) that radiate heat onto the Grenache, Syrah, and Mourvèdre vines through the night. Château Rayas, Château Beaucastel, Châteauneuf from Henri Bonneau — the range of styles here is enormous, but the terroir character is unmistakable.
