The Sherry wines of Jerez de la Frontera in Andalucía don't age like other wines. Under a layer of flor yeast, Fino and Manzanilla develop flavors of almond, sea breeze, and toasted bread that last indefinitely. Amontillado ages past the flor into something darker and more oxidative; Oloroso bypasses the flor entirely for nutty, raisin-dense richness.
