Boroli began production in 1997 and initially followed the modernist trend in Piedmont. In 2012 Achille Boroli — who had already raised the family restaurant to Michelin-starred status — took over the winery. What followed was a decisive return to traditional Barolo production: large casks, extended maceration, and wines built to age.

Dusk primary — Barolo is the archetype of Dusk energy: massive tannin structure, dark and dried-fruit aromatics, the kind of wine that demands patience. Boroli's traditional approach makes this as true as it can be. Dawn secondary — the craft and precision that Achille brought to both the kitchen and the winery show in the balance and refinement of these wines.
Tasting note
Two traditionally vinified Barolos from a family whose son Achille raised their restaurant to Michelin-starred status before taking over the winery and steering it decisively back toward traditional production. The results since 2012 have been striking. Two bottles of what great Barolo is supposed to taste like.
